Eggplant melts

You will need......

2 eggplants preferable European (the long, thin ones)
Tomato salsa - you can make your own or buy sugar-free store bought salsa
1 cup of sour cream
4tbsp chopped jalapenos
1 cup of mixed grated cheese (cheddar, mozzarella, parmesan)
Olive oil

*Slice eggplants in half and drizzle generously with olive oil and roast in a pre-heated oven at *200c for 15-20 mins
*Add tomato salsa and cheese then roast for a further 10 mins or until cheese has melted
*Top with sour cream and jalapenos then serve

  1. I was going to attempt this one tonight until I cut open the eggplant and saw what looked like little seeds in the middle (can you tell I'm an eggplant virgin LOL) .. do you leave those bits in???

    Hopefully I can get over my initial revulsion at the eggplant smell to try this yummy recipe :)

    I don't bother removing the seeds. Never really noticed the smell off an eggplant??
    Please try it and let me know what you think - I made these for lunch today and they are so delicious - you can add some fried chorizo to jazz it up x
